No Noodle Chicken Soup

   I'm adding another blog post today to add to the Paleo recipe ideas.  I have been making this chicken soup recipe for over 10 years but just within the last year have I decided to make the Paleo version which would obviously have no noodles. It is still just as delicious.

Ingredients

1 chicken (3 to 4 pounds)
12 cups cold water
6 carrots, cut into 1-inch pieces
4 celery ribs, cut into 1-inch pieces
2 onions, cut into 1-inch chunks
1 & 1/2 teaspoons dried parsley (may use fresh)
1 tablespoon sea salt
1 & 1/2 teaspoons black pepper

Directions

~Combine all ingredients in a large soup pot. Bring to a boil over high heat. Reduce heat and simmer 3 hours (until chicken falls off bones).
~Remove chicken from pot and cool slightly. Remove skin and take meat off bones. Tear meat into small pieces then return to pot.
~Simmer and serve.


*Note ~ Save your skin and bones to make freezable chicken broth! Put them in a crock pot, cover the chicken parts with water, add sea salt, pepper & garlic to taste. Set on low overnight. Wake up, strain the broth with a cheesecloth. Toss everything else out but the liquid. Put the broth in freezer bags or containers and you have your own chicken broth for future recipes! Make sure you write the measurement on the bag so you don't have to do it later. I do mine in 2 cup measurements. Good luck and happy eating!
